The 2021–2022 season was characterized by a dry winter with low rainfall, but with good water availability for irrigation. Spring was frost-free, and summer arrived early, with the presence of heat waves and average temperatures lower than the previous season. Vineyard development remained within the usual timeframes, and harvest was delayed by around 10 days compared to the 2021 harvest. Grape health was excellent, with yields within expectations. It was a successful vintage, producing white wines of great quality—fresh, aromatic, well-balanced, and with good acidity. Red wines also show excellent quality and great potential. After a careful hand harvest and winery selection, vinification began with a 7-day cold maceration at low temperature (10°C). Alcoholic fermentation lasted 8 to 10 days at an average temperature of 26°C, using different yeast strains. This was followed by a 20-day post-fermentation maceration. The wine then matured in used French oak barrels for 12 months, during which malolactic fermentation also took place. Finally, the wine was clarified and filtered before bottling.
Tasting Notes
Deep garnet in color, this wine reveals intense aromas of cassis liqueur, black plum, and dates on the nose, complemented by subtle mentholated notes that add freshness. On the palate, it shows silky tannins and a versatile, well-balanced Cabernet, with vibrant acidity that lends structure and elegance.
Pairing Recommendation
Ideal for pairing with lean meats and slow-cooked preparations, such as osso buco with pea purée, where its silky tannins and balanced acidity enhance the flavors of the meat without overpowering them, while its fruity and mentholated aromas add complexity and freshness to the dish.
