Profile & Story

Pintom Sur is the result of a tiny 0.3-hectare plot in Canopus Vineyard, in El Cepillo. The wine comes from a 0.3-hectare plot of Pinot Noir. A parcel marked by the cool climate and calcareous soils, combining limestone and chalky patches of calcium carbonate sedimented with sand (known in the region as “Indian cement”). These very specific conditions and a meticulous organic-biodynamic farming produce compacted clusters with small concentrated berries, thick skin, high natural acidity and focused, taut tannins. The decision to make a wine solely from this plot arose in 2015, and after four years of deepening our understanding of the Place, the first harvest took place in 2019. The grapes are harvested early in the morning and crushed by hand on the estate in small containers. Very gentle movements to start a slow fermentation. Alcoholic fermentation takes place in about 18 days and malolactic fermentation occurs almost immediately. Since the 2022 harvest, the wine has been aged in a 400-liter Clayver ceramic container.

Tasting Notes

The 1,000 bottles (plus a few magnums) from this plot contain a complex, mineral and elegant wine. Aromas of red small black berries and hints of graphite, white pepper. An electric, mid-body palate, taut silky texture with a long and lively finish.
