About the Wine
This Viognier was fermented in the skins the same way we ferment our Pinot Noirs: receiving only gentle pigéage in the cellar daily until dryness. In the vineyard, this fruit was farmed 100% organically by hand. Fermentation was long and cool up on our little mountain. We prefer cool fermentations as they help preserve the more delicate nuances in the wines. It was pressed into neutral French oak barrels before aging on the lees for 10 months.
Tasting Notes
On the nose this wine is very pronounced with aromatics of apricot, honeysuckle and peaches. On the palate it is completely dry with a soft tannin structure reminiscent of orange pekoe tea, sandalwood and blood oranges.
Pairing Notes
Pairs well with Indian food, Thai Food, and Middle Eastern Food; it complements many different aromatic spices. Also would be a wonderful pairing for grilled chicken, pork or seafood.
