Domaine de la Taille aux Loups is Jacky Blot's certified-organic Chenin Blanc estate in Montlouis-sur-Loire, now continued by his son Jean-Philippe. 'Triple Zero' is a petillant naturel made from 100% Chenin Blanc off 60-80+ year old vines, named for its three zeros: no chaptalization, no liqueur de tirage, and no dosage. It undergoes one long fermentation with indigenous yeasts, no malolactic fermentation, is fermented and aged in 5-10 year old barrels, and rests on its lees for 24 months. Potential alcohol is approximately 12-12.5%, with roughly 3 atmospheres of natural pressure.
