Domaine Vincent Pinard farms Kimmeridgian 'terres blanches' limestone soils in Bue, Sancerre, continuing a winemaking tradition now in its 20th generation, led today by brothers Florent and Clement Pinard using organic and biodynamic practices. The Flores cuvee is 100% Sauvignon Blanc from southeast/south and southwest/west-facing vines averaging 35 years old on Kimmeridgian/Oxfordian limestone ('caillottes') at 240-275m elevation over a 7-hectare area, hand-harvested and Guyot-pruned (yield 50 hl/ha, ~40,000 bottles produced). Vinification uses no sulfur on the musts and very little in the finished wine, indigenous yeasts cultured from the domaine's own parcels, and the estate's own volcanic sulfur. After a long pneumatic pressing the wine is raised for 7-9 months in wood vats and is bottled unfined and unfiltered, so it may show a light natural deposit.
