Mendall is the label of Laureano Serres Montagut, a pioneer of natural winemaking in Terra Alta, Catalonia, farming organically and fermenting without added sulfur since founding the project in 1999 from his grandfather's vines. All-In blends Macabeo with a touch of Garnacha Blanca from young and old parcels; the final-press juice from several cuvees ferments on its skins for a few days to about a week, then rests seven months in vat.
