Chateau Simon, Barsac/Sauternes. This Cuvee Exceptionnelle is 80% Semillon, 18% Sauvignon Blanc, 2% Muscadelle from the best parcels, hand-harvested in 4-5 successive tries selecting only botrytized (noble rot) grapes; gentle overnight pressing, then fermented and matured 18 months in new oak.
Tasting Notes
Sumptuous golden hue; elegant nose of citrus with a hint of honey; melon and exotic fruit enlivened by candied apricot; very long, complex, indulgent finish with spiced, minty notes.

Aperitif, white meats, spiced/Asian dishes, cheeses and foie gras.
