Profile & Story
Domaine de Montille (Volnay); organic since 1995 and biodynamic since 2005 (Ecocert). Saint-Aubin 1er Cru 'En Remilly' is Chardonnay from 1.70 ha of shallow, stony, south-facing soil adjacent to Le Montrachet; fermented in 228- and 600-litre barrels (15% new Allier oak, light toast), aged one year then racked to stainless steel to preserve minerality. 12.5% alc.
Tasting Notes
Neal Martin (Vinous, 91-93): an attractive bouquet of crushed stone and sea spray; well-defined on the palate with crisp acidity, a twist of sour lemon, fine weight and good length.
