La Staffa is a small estate in Staffolo, in the Castelli di Jesi zone of the Marche, run by Riccardo Baldi. This Verdicchio dei Castelli di Jesi Classico ferments in a mix of acacia casks and cement, then rests on its own fermentation lees for several months, aiming for the easy 'drinkability' that Baldi values and an expression true to its territory.
