Domaine Les Enfants Sauvages is run by Carolin and Nikolaus Bantlin, who have made wine in Fitou, near the Spanish border in the Côtes Catalanes (Languedoc-Roussillon), since 2002. Che Chauvio — meaning roughly "if you knew" in the Occitan dialect — blends Syrah, Cinsault and Mourvèdre.
