Kapistoni Winery is a family-owned estate in Saguramo, in Georgia's Kartli region, roughly half an hour north of Tbilisi, farming an organically cultivated 10.2-hectare estate of indigenous grape varieties. Tavkveri, a light-skinned indigenous Georgian red grape, is fermented on its skins in qvevri (traditional egg-shaped clay vessels) for six months with no additives or filtration.
