Jean-Christophe Garnier, a former sommelier turned Loire winemaker certified organic since the estate's founding, tends old-vine parcels of Loire specialties around Saint-Lambert-du-Lattay in the Coteaux du Layon. 'Les Nouettes' is a co-ferment of Grolleau and Pineau d'Aunis, spontaneously fermented with a short pre-press maceration and aged in neutral fiberglass vat, bottled unfined and unfiltered with no added SO2 -- meant to be served with a slight chill.

A classic chillable red for charcuterie, or lighter fare like grilled vegetables and poultry.
