Quentin and Angelique Bourse farm 12 biodynamic hectares in Azay-le-Rideau, Touraine, on clay-silex soils. This 'Rouge' blends Cabernet Franc, Merlot, and Pinot Noir, hand-harvested and macerated for 8-10 days before pressing and fermenting in tank, then aged in large wooden foudres with no fining or filtration.

Medium-bodied with soft tannins and balanced acidity; baked cherry, black fruit, and earthy undertones.
