Domaine Les Astrelles farms about 14 hectares organically across Gevrey-Chambertin, Bourgogne, Marsannay and Fixin under owners Isabelle and Jean-Marie Chapier. 'Les Lares' comes from 40-year-old Aligoté vines in Curtil-Vergy, on limestone-marl soils with white clays; the grapes are hand-harvested, fermented in barrel without stirring, and aged 15 months (10% new oak, 10% clay vessels).
