Ktima Tselepos was established in 1989 by Yiannis Tselepos, a Cyprus-born, Dijon-trained oenologist, together with his wife Amalia, on the Mantinia plateau of Arcadia in the Peloponnese. X•mf is a low-intervention wine made from the grey-skinned Moschofilero grape vinified 'orange style': roughly 20 days of extraction with a portion of whole stems and spontaneous fermentation with indigenous yeasts, followed by maturation in clay amphorae. It is bottled unfiltered and without fining.
