Avinyo is a family-owned estate in the Penedes (Catalonia), certified organic since 2019, farming traditional Catalan varieties -- Xarel-lo, Macabeo, and Parellada -- without foreign grapes. Petillant Blanc is a 'vi d'agulla,' a lightly sparkling wine bottled with a little natural effervescence, blending 60% Muscat de Frontignan grown at 250-350m elevation with 25% Macabeo and 15% Xarel-lo. Fermentation begins with indigenous yeasts in temperature-controlled stainless steel, followed by a Charmat-method secondary fermentation. ABV 10.5%.
