Champagne Ayala, based in Ay and owned by the Bollinger family since 2005, is helmed by winemaker Caroline Latrive, one of few female Chefs de Cave at a Grande Marque house. Brut Majeur Extra Age blends roughly 40% Chardonnay, 40% Pinot Noir, and 20% Meunier, given an extra year of lees aging (about 48 months total, a year longer than the classic Brut Majeur) with a dosage near 7 g/l.
