Profile & Story
Created in 1988 as a tribute to Elisabeth Salmon, a descendant of the House's founders, this prestige rose cuvee is made only in exceptional vintages. The 2013 blends 47% Chardonnay (Oger, Cramant, Mesnil-sur-Oger) and 53% Pinot Noir (Mareuil-sur-Ay, Ay, Bouzy), with under 10% of the Pinot Noir vinified as a still red wine from old vines to shape the cuvee's color and structure.
Tasting Notes
A luminous, soft salmon-pink hue with coppery glints. Red and black berry fruit lifted by peony and violet, with blueberry, cherry pit, and rose. Delicate yet bewitching power on the palate, with cherry clafoutis, apple, and blood orange jelly, finishing on chalky minerality.
Pairing Recommendation
The house recommends Bresse poultry with crayfish or langoustines in a saffron-scented sabayon.
