Palmento Costanzo farms volcanic-soil vineyards on Mount Etna's northern slope, restoring a historic stone palmento as their winery since 2011. Mofete, named for the geothermal vents of the volcano, blends 70% Carricante and 30% Catarratto from estate vineyards.
