Tenuta Demaio is a 35-hectare organic estate in San Severo, Puglia (Foggia province), certified organic since 2004. The Demaio family began bottling wine in 2013 with the family's son-in-law Giovanni, focusing on indigenous Puglian varieties. All wines are made through spontaneous fermentation in stainless steel with no clarification, sterile stabilization, or filtration, and minimal sulfite use. The rosato is produced from Nero di Troia grapes using natural methods with minimal intervention from vineyard to cellar; eco-friendly packaging with lighter bottles, Stone Paper labels, and fully recyclable cartons.
