LaSelva is an organic winery in the Maremma, in southern coastal Tuscany, based at Magliano in Toscana and farming organically since 1980 (“cultura Bio dal 1980”). Produced exclusively from Vermentino, a grape typical of the Maremma, this wine reflects the producer's view that Vermentino needs heat, light, and temperature shifts to express its aromatic character, with hilly vineyards giving it a strong personality. The grapes are hand-harvested in the coolest hours of the day, then crushed and pressed; the free-run must is decanted and fermented in stainless steel at 16 °C, followed by six months of ageing on the lees in steel tanks and at least three months of refinement in bottle.
Tasting Notes
Straw yellow. Intense, fragrant scents with hints of citrus fruits, peach, and yellow flowers. Harmonious and full-bodied on the palate, with a pleasant freshness and an intense, persistent, savoury finish.
Pairing Recommendation
Pairs with aperitifs, vegetable and fish dishes, shellfish, and white meats. Serve at 10–12 °C.
