Profile & Story
Vallis Mareni produces its sparkling wines under the Ombra trademark — a name that in the Veneto means both “shade” and “a glass of wine,” from the old custom of meeting for a drink in the shade of the Campanile in St Mark’s Square in Venice. The wines belong to the Prosecco family, made from rigorously selected grapes pressed under low pressure and rendered sparkling by the Charmat method, pairing innovation with traditional methods. Ombra Rosé di Pinot is a blend of Pinot Nero, Pinot Bianco, and Chardonnay from Alto Adige (between San Michele Appiano and Magré). The grapes are harvested in the first half of September and made by white vinification at a controlled 20 °C (with partial skin contact for the Pinot Nero), then taken to sparkle by slow refermentation in sealed tanks at 12–14 °C, resting on the yeasts for about three months.
Tasting Notes
Delicate pale pink in colour, with a very fine, continuous perlage. The bouquet is pronounced, persistent, and fine, offering a wide range of fruit aromas such as peaches, apricots, and red currants. Dry and refreshing on the palate, well structured and superbly soft, with a harmonious balance and a fruity finish.
Pairing Recommendation
Goes very well with cold cuts, first courses, and roasted white meats.
