Tasting Notes

Grapes are destemmed and crushed, with the must rapidly chilled to 8C en route to pneumatic pressing; some fruit receives skin contact for added flavor and body, then the juice is cold-settled before fermentation with selected yeasts at 15-18C and matured in stainless steel on yeast lees. Straw yellow with greenish reflections, showing fresh, rich fruity aromas of apple and pear with a hint of citrus fading into a floral bouquet.
