About the Wine
The 2021 Barton The Dance is a flagship Cabernet blend made from the best barrels in the cellar, featuring grapes from the Barton Estate Vineyard. The blend consists of 75% Cabernet Sauvignon, 15% Cabernet Franc, and 10% Malbec. The grapes were 100% destemmed and fermented in stainless steel tanks until dry, then aged in 50% new French oak barrels for 22 months. The wine has an approximate Brix at harvest of 25 and was bottled on September 15, 2023.
Tasting Notes
The wine features aromas of dried cranberry, cedar, and fresh green bell pepper, with flavors of huckleberry, violets, mocha, sweet tar, and crème de cassis. Additional notes include Castelvetrano olive, red chili, cumin, paprika, oregano, tomato leaf, purple basil, and dusty leather-bound book nuances.
Pairing Notes
Pairs well with a romantic dinner for two, fireside, or dry-aged ribeye. The wine can be enjoyed now or cellared for 10–15 years.
