Profile & Story

Flor is the house sparkling wine of the Bastianich family's restaurants, a private-label Prosecco created by Joe Bastianich with Lidia Bastianich and Mario Batali and bottled under Azienda Agricola Bastianich. It is 100% Glera. The label stops short of the Valdobbiadene designation because a portion of the fruit grows just outside the DOC boundary, though those vineyards are farmed to the same production limits the DOC prescribes. Joe Bastianich selects the base wines himself for fruit and structure, and the secondary fermentation runs sixty days in small autoclave rather than the thirty typical for Prosecco, the extra time on the lees giving a finer perlage and a creamier, more complex wine. Production is roughly a thousand cases, tiny in a denomination where a single house can make a million.
