Carballal is a small, 15-hectare Rías Baixas estate in the O Salnés sub-zone, farmed for more than forty years by the Vázquez Abal family — 'Sete Cepas' ('seven vines') nods to the family's seven brothers. The 100% Albariño is hand-harvested, fermented with native yeasts in stainless steel, and aged on its fine lees with minimal sulfur added only at bottling.
