Toni Carbó took over his family's Penedès vineyard in 2012 and renamed it Celler La Salada. Sota els Ametllers ('Under the Almonds') comes from a single plot ringed by forest and almond trees, planted in 2013 on sand-dominant soil; the Malvasia de Sitges macerates for two weeks, 80% whole-cluster and foot-pressed, then ferments and ages unfined, unfiltered, and with zero added sulfites.
