Benoît and Emmanuelle Chauveau farm a small 1.5-hectare parcel in Pouilly-Fumé with deep respect for the environment, producing only around 8,000 bottles of Les Croqloups a year. The 100% Sauvignon Blanc is left to reach full ripeness before hand-harvesting, then destemmed and sorted before vinification and aging on the lees.
