Domaine de Montille is a family estate based in Volnay, in Burgundy, guided by the philosophy of patriarch Hubert de Montille, captured in his words that "where wine is present, civilization thrives and barbarism fades away." The domaine has farmed organically since 1995 and biodynamically since 2005, with all of its wines certified by Ecocert. The Bourgogne Blanc 'Le Clos du Château' comes from an estate vineyard of about 4.90 hectares in a single block at the foot of the Château de Puligny-Montrachet, planted on deep silt-and-clay soils and producing around 47,400 bottles a year of 100% Chardonnay. After a light settling, the must is fermented, completing both alcoholic and malolactic fermentation, in 228-liter and 600-liter barrels, of which 5 to 20% are new oak from Allier with a light toast; about a year later the wine is racked into stainless steel tanks for the remainder of its aging, a step intended to preserve freshness and minerality. The wine reaches 13% alcohol.
