Profile & Story

Bodega Los Bermejos farms on Lanzarote, in the Canary Islands, where volcanic eruptions between 1730 and 1736 buried much of the island in ash and forced the local population to adapt, planting each vine in a hand-dug hollow protected by a crescent of volcanic stone within a layer of black ash, or picón, that insulates the soil and prevents water loss. Because Lanzarote's vines were never touched by phylloxera, the estate still farms original, ungrafted European rootstock, and handles the fruit gently, using no pumps or mechanical handling, only gravity and soft pressing. This traditional-method sparkling rosé is made from Listán Negro, the island's signature red grape, grown in that same volcanic soil, and is vinified with zero dosage, meaning no sugar is added at disgorgement, following the house's traditional Champenoise method of secondary fermentation and lees aging in bottle.
