Profile & Story

Giuseppe Cipolla began planting vines about ten years ago on family land in the Contrada Passofonduto, roughly 25 km from Agrigento on Sicily's southern coast -- a rugged, mineral-rich landscape once home to active salt and sulfur mines. He farms organically, working mainly with local varieties including Grillo, Catarratto, Nero d'Avola, Nerello Mascalese and Zibibbo. Solfare (named for the region's naturally occurring sulfur deposits) is a white blend of mostly Grillo and Catarratto, destemmed and macerated for one day in fiberglass before fermenting and aging half in stainless steel and half in French oak.
