Profile & Story
The Kabaj family has grown grapes for generations in Goriska Brda, Slovenia's best-known wine district bordering Italy's Collio. Katja Kabaj met French winemaker Jean-Michel Morel while he worked at an estate in Italy; the two married and settled in Katja's home village, releasing their first commercial vintage in 1993. Rebula (the Slovenian name for Ribolla Gialla, grown in Brda since the 13th century) is hand-harvested in late September, destemmed, and fermented on the skins for 30 days with wild yeast, then aged about two years in French oak with a further six months in bottle.
Tasting Notes
A textured, orange-hued white with a deep amber color and moderate tannin from extended skin contact -- not oxidative in style, but textural without losing acidity.
