Orsi -- Vigneto San Vito is a small, biodynamically farmed family winery in the Bolognese hills of Valsamoggia, run by Federico Orsi and his wife Carola since 2005. Fermentations are spontaneous with no selected yeasts, and the wines see no fining or filtration. Posca Bianca is a vino perpetuo made using a solera-style system: a blend of Pignoletto, Albana, Alionza and Malvasia continually layered into an old concrete vat from vintages going back to 2011, with only 5-10% of the tank bottled at a time, so each release is a living blend of old and new.
