Oyster River Winegrowers is a horse-powered farm, vineyard, orchard and winery in Warren, Maine, making low-intervention wines and ciders since 2007. Morphos, made since 2012 and the winery's best-selling wine, is a petillant naturel blend of Cayuga and Seyval grapes. It is bottled toward the end of active fermentation and finishes fermenting in the bottle, capturing a gentle natural sparkle and fine lees with no added sulfur, no acidulation, deacidification, chaptalization, amelioration, tannins, enzymes, or yeast nutrients.
