Salvatore "Turi" Marino grew up around wine in Pachino, in the far southeastern corner of Sicily, where his father and grandfather sold bulk wine. After a decade working at large wineries in Sicily, Puglia and California, he and his wife Stefania started their own polycultural farm in 2017, built from parcels bought or rented from her family and neighbors. His Turi Bianco is 100% Catarratto from a young vineyard he planted in 2016 alongside a ten-year-old rented parcel; the bush-trained vines are farmed by hand following the lunar calendar. Grapes are destemmed, macerated for five days, fermented with indigenous yeast in stainless steel, put through malolactic fermentation, then aged in concrete until bottling the following spring.
