Profile & Story
Château des Demoiselles is a roughly 300-hectare Provençal estate in the Esclans Valley near La Motte, Côtes de Provence, under the same ownership group as Château Sainte Roseline. 72 hectares are under vine; the property is certified organic and High Environmental Value (HVE). The flagship rosé is built around Grenache, Mourvèdre, Cinsault, Carignan and other traditional Provençal varieties. Grapes are picked at night to avoid oxidation and preserve freshness; the juice is cold-stabilized, settled for about eight days, then vinified and aged on fine lees in stainless steel. The 2024 vintage is bottled at 12.5% ABV.
Tasting Notes
Shimmering pale-salmon color. Aromas of wild strawberries, white peach, and pink grapefruit with delicate jasmine notes and hints of Provençal herbs. Crisp palate with juicy citrus, red currant, and saline minerality, a silky texture, vibrant acidity, and a long, bright finish.
Pairing Recommendation
Recommended with vegetables, soft cheese, shellfish, fish, and white meat.
