Profile & Story

The producer is Domaine Guy Allion, a family estate in the Cher Valley (Touraine) based in Thésée, now in its fourth generation and run by Cédric Allion, son of Guy. Sauvignon Blanc is the domaine's flagship (about 68% of production), grown on the estate's characteristic 'Perruche' soil -- a clay-silica composition over limestone that gives good drainage and root aeration -- on slopes of at least 5% gradient, considered among the most favorable in the region. 'Domaine des Mazelles' / 'Les Mazelles' (the domaine even names a hiking trail 'La Rando des Mazelles') is a vineyard/lieu-dit name tied to this estate, not a separate winery -- confirmed via the producer's own site, where the matching product (100% Sauvignon Blanc, AOP Touraine) is listed as 'Domaine du Haut Perron Sauvignon Blanc,' with the bottle's own label reading 'Les Mazelles.' Grapes are gently pressed into gravity-fed, temperature-controlled tanks; juice settles 24-72 hours; fermentation runs on indigenous yeasts; the wine ages on lees 6-12 months before bottling. Awards include Silver at the 2021 Concours Mondial du Sauvignon and Gold at Angers 2014.

Tasting Notes

Pale yellow with green reflections, perfect clarity and brilliant shine. Nose of green apple, citrus, and white flowers (blackcurrant bud); after aeration, boxwood/herbaceous notes emerge. Smooth, supple palate with balanced acidity and good structure; the finish echoes citrus and a refined vegetative character.

Pairing Recommendation

Pairs well with oysters, mussels, and shrimp; also good with white fish, fresh salads, vegetarian dishes, fresh cheeses (goat, ricotta), Asian cuisine, Mediterranean olive-oil dishes, and light poultry. Serve at 10-12°C.
