Profile & Story

Domaine Sautereau (also sold/labeled as Domaine David Sautereau) traces its winemaking lineage in Sancerre back to 1683 -- ten generations of the same family. David Sautereau, who studied winemaking in Burgundy and Champagne, has run the domaine since his first harvest in 1997. The roughly 20-hectare estate farms plots across Crézancy-en-Sancerre, Bué and Sancerre on three classic soil types -- rocky limestone 'Caillottes,' clay-limestone 'Terres Blanches,' and marls -- about two-thirds planted to Sauvignon Blanc. Each terroir/soil parcel is vinified separately with controlled fermentation temperatures to preserve a fruit-driven style, then blended before bottling; the wine ages on its fine lees in stainless steel. The estate pursues increasingly sustainable, low-intervention vineyard practices, without yet holding formal organic certification.

Tasting Notes

Pale to medium lemon-yellow color, with an open, intense nose of citrus (grapefruit) and exotic fruit (mango). Fresh, lively attack combining floral and fruit notes (candied lemon) with a tension that balances directness and finesse.

Pairing Recommendation

Recommended as an aperitif, or paired with white fish, seafood, and goat's cheese; serve at 10-12°C.
