Barolo DOCG is made entirely from Nebbiolo grown on a small group of hillside communes in Piedmont, and is one of Italy's most tightly regulated appellations: the wine may not be released until at least 38 months after harvest, of which a minimum of 18 must be spent in wood. That long ageing, together with Nebbiolo's naturally high acidity and tannin, is why Barolo reaches the table later and with more structure than most Italian reds.
