Profile & Story

Elena Walch farms across a broad spread of Alto Adige terroirs from its historic base in Tramin and the Castel Ringberg estate at Caldaro, and the Selezione range is the house's classic varietal line. The Sauvignon comes from south-east and south-west facing sites on calcareous soils with sand, where Mediterranean warmth meets the cool air coming down off the Dolomites. The fruit is carefully pressed and the juice statically clarified at low temperature, then fermented at a controlled 19 degrees in stainless steel and matured on its fine lees for several months. The estate suggests serving it at 12 to 14 degrees.

Pairing Recommendation

Good as an aperitif and with pasta and fish dishes, particularly freshwater fish.
