The Saracco family has grown Moscato at Castiglione Tinella, in the hills of the Asti zone, since the early 1900s, and Paolo Saracco, who studied oenology before taking over from his father Giovanni, made bottling the family's own Moscato d'Asti the estate's signature. The wine is pure Moscato Bianco. Bunches are pressed gently so that only the most flavourful juice from the outer part of the berry is taken, and the must is held in stainless steel at minus three degrees, sometimes for months, until it is moved into pressure tanks for a single temperature-controlled fermentation that is stopped at around 5.5 percent alcohol. It is microfiltered and bottled to keep the freshness and aromatics intact.
