Bodegas Los Bermejos, founded in 2001 in San Bartolomé on the volcanic island of Lanzarote (Canary Islands) and led by winemaker Ignacio Valdera, specialises in organic wines from native island grapes. This white is 100% Diego (known elsewhere as Vijariego Blanco), grown in the island's distinctive hoyos — vines set in hollows of black volcanic ash, shielded by low stone walls.
