Yá Cuvée 23 is a grower Cava — estate-grown and produced at the family-run Sumarroca winery (winemaker Carles Sumarroca) in DO Cava, Sant Sadurní, from a single organically and dry-farmed vineyard at about 1,200 ft on limestone, clay and river-rock soils. It is made only with free-run juice from sustainably farmed, hand-harvested Parellada, Macabeo and Xarel·lo and aged on the lees for roughly two and a half years before disgorging. The cuvée was created by seeking out and blending the best artisanal grower Cavas of the Alt Penedès.
