Enoteca Bisson was founded in 1978 at Chiavari by Pierluigi Lugano, who fell for the wines of the Ligurian coastline and built the house into a high-standard producer preoccupied with preserving the region's increasingly rare native varieties; it is run today as Bisson Societa Agricola from Sestri Levante. This Colline del Genovesato Bianco is 100% Pigato from the Golfo del Tigullio, drawn from two plots, Tenute di Trigoso in the hills above Sestri Levante and Verici at Casarza Ligure, on clay soils with south-west exposure, trained controspalliera and Guyot-pruned to seven to nine buds at 7,000 vines per hectare. After a careful green harvest the fruit goes through a cryomaceration carried out with no added sulphites before fermentation, and the wine is bottled the spring following the harvest at 12.5% alcohol.
