Profile & Story
Cantina Favaro is a family estate founded in 1992, when Benito and Rosanna Favaro bought a small farm near Lake Viverone at Piverone, in the Canavese of northern Piedmont. Benito works it with his sons Camillo and Nicola, and they are true garagistes, making the wine in a subterranean cellar beneath their house right next to the vineyards. Farming is certified organic and total production runs to about 1,500 cases, hand-harvested and sorted at the winery, vertically pressed and fermented on native yeasts. Ros, named for Camillo's mother Rosanna, is 100% Nebbiolo from 1.1 hectares planted in 2003 on morainic clay and sand facing south at 410 metres. The fruit is eighty per cent destemmed and fermented three weeks in 500-litre open tonneaux with gentle cap submersion in place of pumpovers, then aged fourteen months in fourth and fifth-passage barriques and tonneaux without racking, and bottled unfiltered and without cold stabilisation on only a trace of sulphur.
Tasting Notes
Camillo has a very clear idea of what he wants from this wine: absolute purity, a precise and pared-back Nebbiolo, as elegant and aromatic as anything made elsewhere in Piedmont.
