Champagne J. Lassalle was founded at Chigny-les-Roses on the Montagne de Reims in 1942 by Jules Lassalle. After his death in 1982 his wife Olga and daughter Chantal Decelle-Lassalle took the house on, and his granddaughter Angeline Templier joined as winemaker in 2006, giving the estate its motto of one woman, one spirit, one style. The house farms sixteen hectares of premier cru vineyards across all three Champagne varieties, roughly half of it Meunier, pressing each plot separately on the wooden basket press Jules installed and letting its wines finish malolactic fermentation, which few in the region do. Lassalle et Filles is a separate negociant label bottled by the house's registered company at Rilly-la-Montagne rather than one of the estate's grower cuvees; it blends Chardonnay, Pinot Meunier and Pinot Noir at 12% alcohol, and no technical sheet for it is published.
