Profile & Story
This wine comes from the 3-acre Satrabakho vineyard in the Mukuzani micro-zone on the right bank of the Alazani River at 1,410 feet. Grapes are green-harvested in early summer by hand in 30-40 lb. baskets. Wild fermentation takes place in a qvevri, an egg-shaped earthenware vessel buried underground, for 6-8 months - the ancient Kakhetian method. The wine is lightly filtered and receives a brief 4 months in French oak. Only 830 cases were produced.
Tasting Notes
Intense dark pomegranate with deep fruit aromas and floral touches - think wild cherry, juniper, and dried flowers. High in minerals, low in sulfites, with a solid tannic backbone that is earthy and structured. The qvevri gives the wine a distinctive textural grip and authenticity that sets it apart from any conventional red. Clean, serious, and food-driven.
Pairing Recommendation
A natural with traditional Georgian table - mtsvadi (Georgian BBQ), slow-braised beef, or lamb stew. Also excellent alongside strong cheeses and cured meats. MS Jim Bube's crowd at GuildSomm Chicago called it the standout Saperavi of the flight.
