Profile & Story

Salome is Shumi's prestige cuvee, produced only in the best vintages from the 1.9-hectare Didkure vineyard in Napareuli PDO - land that once belonged to the Kings of Georgia and Prince Alexander Chavchavadze. The Saperavi vines are farmed biodynamically at 450m elevation on mineral-rich southern slopes. Fermentation takes place in a dedicated French oak vat with manual pigeage every 3 hours, followed by 12 months in French oak and a minimum 6-9 months of bottle aging. The wine has a 30+ year aging potential and earned Gold at Mundus Vini 2019. At GuildSomm's 2023 Wines of Georgia Masterclass in Chicago, it was the unanimous favorite of the room and drew praise from Master Sommelier Jim Bube. Tasting Notes

Deep garnet with a complex bouquet of ripe cherry, violet, red rose, and a whisper of fine cigar. The palate is round, silky, and elegant, with the freshness and acidity that are hallmarks of great Saperavi. Oak is perfectly integrated - present but never dominant. A wine built for the cellar as much as the table.

Pairing Recommendation

Ideal with duck confit, rack of lamb, or roasted meats. Also pairs beautifully with aged Georgian Guda cheese or a classic beef tenderloin with mushroom reduction.
