Profile & Story
Wine Company Shumi, founded in 1997 in the historic village of Tsinandali, Kakheti, was the first winery in Georgia to adopt biodynamic viticulture and organic certification. The Saperavi Bio comes from the certified-organic 12-acre Didkure vineyard in the Napareuli micro-zone, on the left bank of the Alazani River at 1,310 feet elevation. Winemakers Giorgi Khatiashvili and French consultant Jean-Michel Ferrande collaborate on all premium wines. All vinification is done by hand using wild yeast, with 4 months in qvevri followed by 6 months in French oak. In 2020, Shumi was named Best Producer Georgia at the Mundus Vini Summer Tasting - the most prestigious recognition the winery has received on the international stage. Tasting Notes
Deep pomegranate in color, with intense aromas of ripe berries, dark chocolate, vanilla, tobacco, and clove. The palate is full-bodied yet soft, with low sulfites allowing the fruit to lead. Well-integrated French oak and balanced acidity give it structure without austerity. The finish is long and velvety, with aging potential of 30+ years.
Pairing Recommendation
Excellent with grilled lamb, beef tenderloin, or hearty mushroom-based dishes. The soft tannins and rich fruit also work beautifully with aged hard cheeses and charcuterie.
