Sawaya Matsumoto is the sake brand of Matsumoto Shuzo, a Kyoto brewery in Fushimi Ward founded in 1791. This Junmai, labeled 'Shuhari' and made from Gohyakumangoku rice milled to 65%, is fermented to be fruity and lightly effervescent.
